This is an easy “recipe.” All you need is a box of muffin mix and some hotdogs. These were made with (2) 50-cent Jiffy Mix from the Dollar General plus a pack of beef hotdogs for $2.75. This made 17 muffins. I figure this makes 8 servings at $.47 per serving. Not bad. The kids really like these and it would make an excellent lunchbox meal, too.
To clean this up a little, you could use organic or gluten-free mix (better yet, make it from scratch) and uncured hotdogs (like these from Applegate Farms). It would still be an inexpensive meal.
- 2 packages Jiffy Cornbread mix
- 8 pack of hotdogs
- 2 eggs
- ⅔ cup milk
- Combine cornbread mix, eggs and milk. Slice hotdogs and stir into mix. Drop mixture by ¼ cupfulls into lined muffin pan. Bake at 400 degrees for 15 minutes or until browned.
- Set on a rack to cool and serve.
