Happy Saturday! Corndog Muffins for the Kids

This is an easy “recipe.”  All you need is a box of muffin mix and some hotdogs.  These were made with (2) 50-cent Jiffy Mix from the Dollar General plus a pack of beef hotdogs for $2.75.  This made 17 muffins.   I figure this makes 8 servings at  $.47 per serving. Not bad.  The kids really like these and it would make an excellent lunchbox meal, too.

To clean this up a little, you could use organic or gluten-free mix (better yet, make it from scratch) and uncured hotdogs (like these from Applegate Farms).  It would still be an inexpensive meal.

Easy snack or lunch for the kids.
Ingredients
  • 2 packages Jiffy Cornbread mix
  • 8 pack of hotdogs
  • 2 eggs
  • ⅔ cup milk

Instructions
  1. Combine cornbread mix, eggs and milk. Slice hotdogs and stir into mix. Drop mixture by ¼ cupfulls into lined muffin pan. Bake at 400 degrees for 15 minutes or until browned.
  2. Set on a rack to cool and serve.
